These smaller, denser beans are highly prized for their unique shape, limited availability, and some say a more nuanced flavor. A "peaberry" is a natural mutation where inside a cherry, is a single bean. This occurs in about 5% of the world's coffee.
They need to be hand sorted after picking and processing, making them a commodity. Because of their rounded shape, they are more likely to stay in motion during roasting, and roast more evenly. Some say peaberry coffee tastes noticeably sweeter and more flavorful than regular beans.
