Philosophy
Here at The Coffee Gallery, after
many years of practice and patience, we feel we have mastered the art of
" The Roast ". Using a process we call " Small Batch Roasting ", our Roastmaster
strives for the optimum development of each bean he roasts. Determining
the " Roast " that best suits the particular bean allows The Coffee Gallery
to bring out the distinctive characteristics that make different coffees
different. Combine that with our policy of roasting only what we need for
each day to insure freshness and you have what we feel is the finest coffee
available anywhere, plus, we ship all mail orders in the USA priority mail
( remember, priority mail is the same from Hawaii as it is from the west
coast or the east coast ), which arrives at your address 2-3 days after
it is roasted for the freshest coffee possible.

.........because we roast each bean based
on its individual characteristics. Most coffee roasters are run by computers
and are set for one type of roast, dark for instance. Because beans from
different countries have different characteristics our Roastmaster roasts
each batch accordingly, for example, a Java bean is much softer than a
bean from Panama or Guatemala, so if you were to roast them both at the
same " roast " then either one is under-roasted, one is over-roasted, or
they both miss the mark all together. We hope this makes sense to you and
