Sulawesi Toraja, sometimes known as Celebes, isn't quite as earthy as other Indonesians. It has a full body that's syrupy with caramelized sugar and a tinge of raisin bread throughout. The lingering finish is decidedly chocolaty with hints of cedar and molasses.
